Easy Ham & Broccoli Pasta Salad
1 head of broccoli
1 cup of kale
1 cup of penne noodles
1 cup of cooked diced ham or bacon
1 cup of grated mozzarella cheese
1 cup of pepitas
1 cup of sour cream
2 cups of mayo
1 teaspoon dried basil
salt and pepper to taste
Cook penne noodles to package instructions. When the noodles are done, rinse them with cold water in a strainer immediately.
Chop the broccoli, kale, and apple into bite size pieces. Add them all into a large mixing bowl.
Add the the ham, pepitas, and mozzarella to the mixing bowl as well.
In a medium sized mixing bow, stir together the sour cream, mayo, basil, salt, and pepper.
Add the sour cream mixture to the large mixing bowl and stir everything together until its well combined.
